Doers and Dreamers – Jose Velasco

It’s great to see a landmark, Uptown building occupied again and especially with a lively Mexican restaurant. Meet this week’s Doer and Dreamer, Jose Velasco, who is rounding out the Uptown dining scene with some authentic Mexican cuisine.

What is your approach to your business or occupation that makes your unique?
I believe what makes Albrijes unique is our close attention to using traditional ingredients which allows our cuisine to be more authentic.

Where are you from originally?
Oaxaca, Mexico

What brought you to the Kingston area and keeps you in this area?
Originally I came to Kingston seeking a temporary job as a chef  but later discovered what a beautiful area it is to live in which made me want to stay here permanently. I am reminded of this everyday as I drive to work by  being able to see those beautiful mountains in the morning. It is always a great way to start my day.

What is your favorite hangout in this area and why?
My favorite area has to be Uptown Kingston. Just being able to walk around and enter very distinctive places found within walking distance gives me a very relaxed feeling.

When you’re not in Kingston, what’s your idea of a wonderful city to visit, and why?
A wonderful city to me, is a city that has a rich history and can be seen or explored easily. I also like a city where things are all within walking distance and has many public places where one can just relax.

Tell us something that we never would have guessed about you.
I originally started cooking because I loved cooking Italian food and wanted to eventually open an Italian restaurant.
